Baked Salmon Fingers

 

 

Did you know that salmon is considered a "super-food"? It is packed with vitamins and Omega 3. It can even help to improve focus at school! However, it can often be frustratingly difficult to convince your little ones to try it due to its heavy fishy scent. That is why my Baked Salmon Fingers are a fool-proof way to get salmon into your family's diet. It's a yummy alternative to shop-bought fish fingers, and I guarantee that even the pickiest of eaters will love its crispy, cheesy coating! These are great to store in the freezer, and are a fantastic finger food for weaning babies too!

Cook time: 15 minutes
Makes: 14  x Fingers

Ingredients:
4 slices wholemeal bread
50g Parmesan cheese, grated
4 salmon fillets, sliced into fingers or chunks
60g plain flour
2 eggs, whisked
 
Method:
  1. Preheat the oven to 200c. Line a baking tray with parchment paper.
  2. Use a food processor to blend the bread and Parmesan cheese into breadcrumbs.
  3. Place the salmon, flour, eggs and breadcrumb mixture into four separate bowls. Place the bowls in a line.
  4. Dip the salmon into the flour, followed by the egg, followed by the breadcrumbs. Place them on a roasting tray.
  5. Bake for about 15 minutes, making sure to turn halfway so they will cook evenly.
  6. Serve straight away or freeze for future use.

Weaning and Storage
6 months+ - Introduce as a finger food for baby to pick up and self feed. Add dips such as Tomato Sauce to increase variety.
