Zoodles with Tomato Sauce



Zoodles (zucchini noodles, also known as courgette pasta) are a healthy alternative to pasta and is a great way of getting some extra vegetables into the kids. They are fun to make so why not get them into the kitchen to help with spiralizing!
This easy zoodle recipe with homemade tomato sauce is delicious and your kids will enjoy them.

If you can't get your hands on a spiralizer, simply peel the courgette into ribbons.

4 large courgettes
4 tbsp olive oil
2 onions, finely chopped
2 cloves of garlic minced
4 tbsp dried oregano
1 tbsp paprika

1 tbsp ground coriander
2 tbsp mild chilli powder
680g Tomato Passata
Handful of fresh basil, chopped
Parmesan cheese, grated
Method

Sprialise the courgettes or use a peeler to make ribbons, and set aside. For fussy eaters who might reject it,peel the green skin.

Heat 2 tbsp of olive oil in a saucepan. Fry the onions until translucent. Add the garlic and cook for 2-3 minutes further.

Add the dried herbs and spices to the pan, followed by the passata. Bring the mixture to the boil, before simmering for 15-20 minutes, uncovered.

Mix in the basil and leave the sauce to sit.

In a large frying pan, add the remainder of the olive oil and cook the courgettes for about 5 minutes, until it has cooked through but is not soggy. Add the tomato sauce, and pasta if using, and coat well. Top with Parmesan cheese.

If your baby is not able for texture, blend the vegetables and tomato sauce, before adding the pasta.
