Coconut Date Cookies

These cookies are super easy to make and nut free so great for the lunchbox. They are naturally sweet and a little bit chewy - your little one will be sure to love.

Makes: 20 cookies

Ingredients:
1 large banana, chopped
5 large Medjool dates, pitted and chopped
90g ( ½ cup) desiccated coconut
90g ( ½ cup) sesame seeds

Method:

  1. Preheat the oven to 135°C (275°F) and line a baking tray with parchment paper.
  2. Place all the ingredients into a food processor and pulse until smooth.
  3. Wet your hands and form the mixture into balls, using about a tablespoon-sized amount for each cookie. Place each ball on the baking tray and press each ball into a cookie shape using your palm.
  4. Bake for 45-50 minutes, until lightly golden and dry to touch. Let cool before serving.
