Cauliflower Rice
This cauliflower rice recipe is a light and fluffy alternative to white or brown rice. It's delicious, healthy and so easy to do!

Packed full of nutrients, you can serve cauliflower rice with any dish of your liking. Suitable for your weaning baby, it's a great way of ensuring that your kids and the whole family are getting more vegetables into their diet.

Cook time: 12 minutes
Makes: 4-5 Adult portions

Ingredients
1 head cauliflower
salt (optional)
parsley (optional)

Method

  1. Preheat your oven to 200°C.
  2. Remove any outer leaves from the cauliflower then cut it into quarters. 
  3. Remove most of the thick core, then cut each quarter into two or three chunks.
  4. Wash the cauliflower and dry thoroughly.
  5. Place in food processor but be careful not to overload. 
  6. Pulse for 30 seconds or so, until the cauliflower resembles fine rice or couscous.
  7. Once you have your rice, spread it out to a thin, even layer on a grease-proof baking tray. 
  8. Place in the oven and cook for 12 minutes, mixing halfway through.
  9. Season with some salt if using. Sprinkle parsley on top and serve.
Weaning and Storage
6 months+ - Introduce as a finger food for baby to pick up and self feed.
