These Chicken and Pesto Zoodles are so easy and delicious that they are sure to be a winner with your little ones! This is also perfect as a finger food for a tasty baby led weaning meal.
Courgette pasta, also known as zucchini noodles or zoodles, are a great way of sneaking in that little bit of added vegetables into the kids! Serving it with pesto (which they love) masks the green of the courgette which may mean they are more likely to accept it.
Cook time: 10 minutes Makes: 4 Adult portions
Ingredients 4 chicken breasts 4 courgettes, spiralised Homemade Basil Pesto or store-bought pesto Handful of sun blushed tomatoes Parmesan to serve Olive oil
Method
If not using store-bought pesto, prepare our homemade basil pesto as per recipe.
Cut the chicken into small chunks and fry off in a little olive oil.
When the chicken is almost finished, heat another pan with some olive oil and sauté the courgettes for 4-6 minutes until cooked to your liking.
Stir in 1 spoonful of pesto into the pan with the chicken, add the remaining pesto to the pan with the courgettes and stir until all of them are covered in the pesto.
Plate up and serve with some grated Parmesan and sun blushed tomatoes.
Weaning and Storage 6 months+ - Introduce as a finger food for baby to pick up and self feed.
