Chicken Parmigiana
 

Chicken Parmigiana: crispy breaded chicken covered in tomato sauce, topped with cheese and grilled until the cheese has melted and the sauce bubbly.

Simply delicious and suitable for your weaning baby!

Follow this easy and simple chicken parmigiana recipe for a quick weeknight dinner your kids and the whole family will enjoy. It is also perfect as a lunch box filler for your kids' school lunches. Just serve in one of our Mummy Cooks Food Flasks and they're good to go!

Cook time: 20 minutes
Makes: 4-5 Adult portions

Ingredients
4 large, skinless chicken breast
1 egg, beaten
75g breadcrumbs
75g Parmesan, grated
2 garlic clove, crushed
Half a jar passata
200g tin chopped tomatoes
1 tsp dried oregano
75g mozzarella, torn
Olive oil

Method

  1. Place the chicken breasts between cling film sheets and mash with a rolling pin until they are nice and thin.
  2. Dip the chicken in the egg, then breadcrumbs (mixed with half the Parmesan). Set aside on a plate in the fridge while you make the sauce.
  3. Heat oil and cook garlic for 1 min, then add tomatoes, passata and oregano before allowing to simmer for 5-10 minutes.
  4. Heat your grill to high and cook the chicken for 5 minutes each side, then remove.
  5. Pour the tomato sauce into a shallow ovenproof dish and top with the chicken.
  6. Scatter over the mozzarella and remaining parmesan and grill for 3-4 minutes until the cheese has melted and the sauce is bubbling.
  7. Serve with pasta and enjoy!
Weaning and Storage
4-6 months – Blended to Runny Puree
6-7 months - Smooth and slightly thicker puree, no lumps
7-8 months - Thicker puree with increased texture
8-9 months - Minced and mashed with soft lumps.
9-12 months – Minced and finely chopped.
