Butternut Squash Risotto


This butternut squash risotto is creamy and delicious and is perfect for a weaning baby who is able for some texture - just make sure to add low salt stock.

Risotto is a favourite of mine and I love how it can be easily changed by adding different vegetables and fish each time. Introduce it to your family and it will soon become a very handy mid-week addition!

Cook time: 30 minutes
Makes: 4 Adult portions

1 medium butternut squash
2 tablespoons olive oil
2 knobs of butter
1 onion, finely chopped
300g Risotto rice (I like to use Arborio Rice)
1000ml low-salt vegetable stock
100g parmesan
1 tablespoon dried oregano


  1. Preheat your oven to 180°C.
  2. Place the squash in a roasting tin, cut-sides up.
  3. Drizzle over one spoon of olive oil and dot with half the butter. Roast in the oven for 45-50 minutes, or until the squash is tender and has turned golden-brown in places.
  4. Meanwhile start to prepare your Risotto. In a large pan heat the oil and butter gently, add the onions and oregano and cook until soft.
  5. In a separate pan bring your stock to the boil and then reduce to a low heat.
  6. Add the rice to the onions and stir well. Continue frying gently until the rice is opaque but not browned.
  7. Add your stock, ladle at a time stirring the rice, allowing each ladleful to be absorbed before adding the next.
  8. Cook for about 20 minutes until the rice is soft, stirring each time you add the stock.
  9. When your squash is cooked, remove from the skin and place in a blender and blend until you get a fine puree.
  10. Add in the butternut squash puree to the Risotto and grate the cheese into the mix.
  11. Serve straight away or let cool and freeze in our Mummy Cooks portion pots.

Weaning and Storage
6-7 months - Smooth and slightly thicker puree, no lumps
7-8 months - Thicker puree with increased texture
8-9 months - Minced and mashed with soft lumps.
9-12 months – Minced and finely chopped.
