Chicken Fajitas




Tasty and flavourful, these chicken fajitas are quick and easy to prepare. Suitable as a finger food for a weaning baby, this is a firm favourite in our house and the kids love the fact they can make up their own fajitas.
Try it out as a mid-week dinner for the family and I guarantee this will become a favourite weekly meal.
Serve with bowls of salsa, grated cheese, sweet corn and crème fraiche and you're good to go!
Cook time: 6-8 minutes
Makes: 4x Adult servings
Ingredients
4 skinless chicken breasts, sliced
1 red onion, sliced
1 red and yellow pepper, sliced
1 tbsp paprika
1 tbsp coriander
A pinch of cumin
Juice of 1 lime
Drizzle of olive oil
Pinch of salt and pepper (leave out for baby under 12 months)
4-5 drops of Tabasco sauce (optional; leave out for baby under 12 months)

Mix everything together in a bowl, ensuring your chicken is evenly coated with the spices.

Heat a griddle pan over a high heat until very hot. Cook the coated chicken and vegetables for 6-8 minutes, or until the chicken is cooked through. Remove from the heat.

Put the chicken and vegetables into a bowl. Place on your dinner table along with heated tortillas, salsa, sweetcorn, crème fraiche, and cheese.

For your baby, chop the chicken and vegetables into bite size pieces to self-feed.
