Kid Friendly Gazpacho
Gazpacho is a delicious Spanish soup that's served cold, which makes it the perfect summertime dish to enjoy on a warm day! This Kid Friendly Gazpacho is cool, refreshing and packed full of healthy fresh ingredients. Makes: 4 Adult Portions
Ingredients
1 tin of chopped tomatoes
1 red pepper, roughly chopped
1 small onion, roughly chopped
2 garlic cloves
10 basil leaves
½ a cucumber
1 tbsp olive oil
Method

Put the tomatoes, pepper, onion, garlic, basil and cucumber into a food processor or blender; blend until smooth.

Add in the olive oil and mix until just combined.

Serve cold.

6-7 months - Smooth and slightly thicker puree, no lumps
7-8 months - Thicker puree with increased texture
8-9 months - Minced and mashed with soft lumps.
