Berry and Apple Ice Lollies


Great for kids and teething babies, these homemade ice lollies are the perfect treat on a hot summer's day. You can use either fresh or frozen berries for this recipe.
I like to use less sugar, as I don't mind it tasting a little bitter and most importantly the kids like it this way. Add a little sugar and taste, then add a little more if you think they might not like the bitter taste.

2 medium eating apples, peeled and cored
450g mixed forest fruits
2 tbsp freshly squeezed orange juice
75g sugar, or to taste (leave out if making for baby)

Place fruit in a medium pan with the orange juice. Heat gently until the berries have released some juice, then bring up to a boil and simmer for 5-7 minutes, until the apple is soft.

Remove from the heat and stir in the sugar until dissolved, taste to make sure it is not too sharp.

Purée the fruit and you can sieve if you wish to remove the seeds.

Cool then pour into ice lolly moulds and freeze overnight.
Weaning and Storage
6 months+ - Set and freeze in a small mould and introduce as a finger food for baby to pick up and self feed.
