Mini Veggie Pies

The perfect comfort meal that’s meat-free and budget-friendly! These mini veggies pies are packed with healthy ingredients and freeze really well too. It's best to freeze before baking, simply remove from the freezer and add about 20 minutes onto the cooking time.

Makes: 8 x Mini Pies
Cook Time: 50 minutes

Ingredients :
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
3 carrots, chopped
3 potatoes, peeled and cubed
2 celery sticks, chopped
150g (5 oz) frozen peas
600ml (2 ½ cups) low-salt
vegetable stock
Salt* and pepper, to taste
2 tsp oregano
1 tsp ground cumin
Juice of 1 lemon
2-3 sheets puff pastry
1 egg, whisked
*Omit salt for baby


  1. Preheat oven to 200°C (392°F).
  2. In a medium pot, add the oil, onion and garlic and cook for 2-3 minutes. Then add the remaining ingredients (except the puff pastry and the egg) and stir well.
  3. Bring to the boil and allow to simmer for about 15-20 minutes, stirring occasionally, or until the vegetables are nice and tender.
  4. Use your individual pie dishes as a guide to cut circles of pastry to cover your pies. Cut a small cross in the middle of each top to allow steam to escape. Divide the filling across your pie dishes and then top with the pastry lids.
  5. Brush the top of the pies with the whisked egg. Bake for 25-30 minutes until the pastry is golden brown.

For Baby 6 months+
Serve the pie to your baby when they manage finger food and some texture. Make sure the pie is cooled down before serving.
