Banana Bread Protein Balls

If you want an easy on the go snack for the busy parent, well banana bread protein bites are your go-to. They’re the go-to due to the sheer fact that they are packed full of vitamins and minerals that are good for you and your baby. Adding nuts like walnuts, almonds, cashews, and pistachios are all a great choice when it comes to this recipe they are packed with healthy fats and antioxidants. If you are breastfeeding, nuts can give your milk a boost for you and your baby (it can even decrease the likelihood of your baby from developing an allergy from nuts).

Cook Time: 45 Minutes


Ingredients
400 g / 2 cups rolled oats (porridge)
2 ripe bananas
64 g / ½ cup almonds
43g / 1/3 cup maple syrup
1 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
1/4 teaspoon salt

Method

  1. Place all ingredients in the bowl of a food processor and blend until well combined and combined like cookie dough. You should be left with some nut fragments. You may need to stop a few times and scrape down the sides of the bowl with a spatula. Process again until merged
  2. Grab the dough with a medium cookie scoop and roll it into a ball. You should get about 18 balls. Place energy bites on a parchment-lined baking sheet and place them in the refrigerator for 30 minutes
  3. If it's too hard, let them sit at room temperature for 5-10 minutes. Then enjoy


To Freeze
Banana bread protein bites should be kept in an airtight container in the freezer and will last up to 3 months.
