Oaty Banana Pancakes

This is a brilliant pancake recipe for Pancake Tuesday! It’s a great way to get bananas into a child’s diet and by adding in the oats it makes the pancakes more substantial and filling. These pancakes also make a brilliant finger food for a weaning baby. Plus they taste delicious! I had two reluctant banana eaters so over the years so I have come up with different recipes to get them into their diets.




Makes: 8 Small Pancakes

  • 1 large banana
  • 2 eggs, whisked
  • 25g porridge oats
  • Pinch of baking powder
  • Splash of vanilla extract
  • Knob of unsalted butter

 

1. Mash the banana and mix in the eggs, oats, baking powder and vanilla extract to form a batter.

2. In a large frying pan, melt the butter over a medium heat.

3. Add the pancake mixture, one spoonful at a time. Cook until you see bubbles rising to the top. Flip over and cook on the other side for two minutes further.

4. Remove from the heat and top with chopped fruit of your choice. Serve straight away or cool and refrigerate.


Tip: To keep the pancakes warm for school pop them into your preheated food flask.
