Fruity Couscous Salad

Healthy couscous
A fresh and tasty couscous salad recipe that kids will love! Start off with just the one pepper and sultanas, then gradually increase the peppers. This is also a great recipe to introduce couscous to your weaning baby.

Add in extra vegetables and nuts of your choice for an extra health kick; thinly sliced celery is great for an extra bit of crunch.
This recipe also makes for a healthy and tasty school lunch. Serve hot or chilled in one of our Mummy Cooks Food Flasks.

Cook time: 8 minutes
Makes: 4-5 Adult portions

Ingredients
250g couscous
1 tsp ground cumin
1 tbsp ground coriander
1 tsp mild chilli powder
4 tbsp of olive oil
1 yellow pepper, chopped
¼ cup of sultanas

Method
  1. Heat the olive oil and spices in a small frying pan over a low heat. 
  2. When the oil begins to infuse, remove from the heat. Add the sultanas and leave to stand for a few minutes, until they have softened.
  3. Cook the couscous according its packet instructions. 
  4. In a bowl, mix the couscous, peppers, and oil mixture until well combined.
  5. Portion into Pots and allow to cool fully before refrigerating.
Weaning and Storage
6 months+ - Introduce as a finger food for baby to pick up and self feed.
