Banana Pancakes
For the most part, my children will eat everything, or at least try everything I offer them. I do however have a problem with getting them to eat a banana. I think it may have something to do with how many bananas they had as a baby. It was such a convenient food that I ended up overutilising it . I came across this recipe the other day on a coeliac post and thought that would be a great way of getting bananas back into their diet.

We tried this recipe out after school and they both devoured it. We added some berries and yogurt. I didn’t dare tell them it was a banana! We will definitely be making this a regular dish.

The pancakes are also perfect for a weaning baby as finger food or served cold as a lunch box snack for a reluctant fruit eater.

Cook time: 10 minutes
Makes: 2 Adult portions

Ingredients
1 large banana
2 eggs
Knob of unsalted butter

Note: Add a pinch of baking powder for fluffier pancakes and cinnamon for extra flavour.

Method
  1. Mash the banana as much as you can and stir in the eggs. 
  2. Melt the butter on a frying pan over a medium heat.
  3. Add spoonfuls of the mixture to the pan and cook for 2 minutes, or until the bottom is set. Flip the pancake over and cook for a further minute. 
We added some Glenilen Farm yoghurt, Berries and maple syrup to ours.   
The Result? Delicious and completely devoured!
Weaning and Storage
6 months+ - Introduce as a finger food for baby to pick up and self feed.
