Ham and Cheese Pinwheels

Pinwheels can be prepared ahead of time either cooked through and then served cold or cooked on the morning of school and added to a warm food flask. They are the perfect alternative to a sandwich. Switch it up using different cheeses (just make sure they melt like a Cheddar). 

Makes: 24 pinwheels

Ingredients:
1 sheet Puff Pastry (thawed)  
1 tbsp Dijon mustard *optional
6 slices of ham 
80g Cheddar, grated 

Method: 

  1. Preheat the oven to 190c. Line a baking sheet with parchment paper. 
  2. Lay the puff pastry out flat and lightly spread a layer of mustard. Add the ham and cheese. Roll into a log and cut into slices. At this point if you have time you can cover with cling film and leave in the fridge for about half an hour. 
  3. Place your cut pinwheels on the baking sheet and bake for 15-18 minutes until the puff pastry becomes golden brown. Serve hot or cold in your child’s lunchbox. 

Tip: freeze portions uncooked and then cook from frozen on the morning of school. Add 10 minutes to the cooking time.
