Healthy Coconut Curry on RTE Today Show

Mummy Cooks Coconut Chicken Curry featured on RTE's Today Show yesterday! Siobhan had the opportunity to appear on the Today Show for a second time for a tasty twist on a fun family meal. It was a fantastic day and great fun to do some more cooking down in RTE Cork!  

Daithai and Maura absolutely loved the Mummy Cooks Coconut Chicken Curry, Maura even described it as 'the ultimate comfort food'! Siobhan was able to share some of her expert advice and wowed Daithai with her tips and tricks.

Try our Mummy Cooks healthy coconut curry at home for a great recipe for the whole family, including your weaning baby.


1 clove of garlic, minced
1 red onion, finely chopped
1 tbsp curry powder
½ tbsp turmeric
1 sweet potato, peeled and cut into cubes
1 carrot, peeled and chopped
½ small cauliflower, cut into small florets
4 tbsp dried red lentils, rinsed and drained (soak over night or few a few hours before preparing for a baby)
4 skinless, boneless chicken breasts, cut into bite-sized pieces
60g frozen peas
400ml can of coconut milk, ensure you shake the can before opening
Olive oil for cooking


1. Heat a large saucepan with some olive oil and sauté the garlic, onion, curry powder and turmeric for 2-3 minutes until the garlic and onion are soft.
2. Add the sweet potato, carrot, cauliflower, red lentils and chicken and stir to coat in the spices.
3. Pour in the coconut milk and bring to the boil.
4. Reduce the heat, place a lid on top, and simmer for 20 minutes until the lentils are soft and the chicken is cooked through.
5. Stir in the peas right before serving. Serve over basmati rice.

Storage and Weaning

This recipe is perfect for a school lunch in our Mummy Cooks Food Flask. 
4mth+ - Not suitable due to texture
6-9mths – Blended with some texture. Store in your 7-8 Month or 8-9 Month Weaning Pots.
9-12mths – Minced and mashed with soft lumps. Store in your 9-10 Month or 9-12 Month Weaning Pots.
Finger Food – Serve as is and allow your baby to pick up pieces of chicken and veg. Store in Toddler Portion Pots and heat as required.
Children over 12m+ and the rest of the family: Serve as is and store in Toddler or Child Portion Pots

Mummy Cooks Top Tips

  • Turmeric and Curry Powder are suitable to be introduced to your baby from 6 months of age.

  • Once you have finished making your curry, serve straight away with some basmati rice, or divide up into Mummy Cooks Portion Pots to label and freeze. 

  • Allow to fully defrost in the fridge before reheating until piping hot.

  • If serving to a baby, soak your lentils before hand to avoid your baby getting wind.
