Makes: 10 balls
Ingredients:
12 dried apricots
40g (½ cup) desiccated coconut
70g (½ cup) cashews
2 tbsp tahini
Method:
- Put all the ingredients into a food processor and blend until combined.
- Remove from the food processor and shape into bite sized balls.
- Store in airtight portion pots for up to one week or freeze for future use.
