Cauliflower and Cheese Bites

Cauliflower and cheese bites
This is one of my most popular recipes. Cauliflower is a favourite of mine, but it did take a while to get my children to share the love. Adding cheese definitely makes it easier! The shape of these bites makes them the perfect finger food for your weaning baby. 

Cook time: 25 minutes
Makes: 9 Bites

Ingredients
1 small head of cauliflower
125g Cheddar cheese, grated
1 egg
1 tbsp oregano

Method
  1. Preheat the oven to 200 °C and line a baking tray with parchment paper.
  2. Separate the cauliflower florets and boil or steam them for 10 minutes, until tender. Run the cauliflower under cold water and drain completely.
  3. Place in a food processor and gently pulse until it has broken up and looks like rice.
  4. In a large bowl, combine the cauliflower, cheese, oregano, and egg.
  5. Using your hand, shape the cauliflower into patties.
  6. Place the patties on the baking tray and bake for 10 minutes. Flip over and bake for a further 10 minutes. 
  7. Once the bites are golden brown, remove them from the oven and allow to cool slightly before serving.
Weaning and Storage
6 months+ - Introduce cauliflower and cheese bites as a finger food for baby to pick up and self feed. Add dips such as Tomato Sauce to increase variety. For more recipes like this check out my Baby and Family book.
