Asparagus and Mint Purée

 

Here's a delicious recipe to get your baby eating their greens, and great for getting in their vitamins and nutrients! This Asparagus and Mint recipe makes a gorgeous thick and creamy purée, and the mint adds a level of freshness your little one will love. I can guarantee you won't be able to resist having a taste too!

Cook time: 15 minutes


Ingredients
340g asparagus spears
4 mint leaves
125ml low salt vegetable stock 

Method

  1. Peel, wash and chop the asparagus
  2. Steam until tender and cooked through about 15 minutes
  3. Blend with the mint leaves and add the stock to form a runny purée
  4. Store portions in your weaning pots and freeze extra for future use.
